Ingredients
- 1 small onion, chopped
- 2 pimientos, chopped
- 3 Tbsp. Crisco
- 3 Tbsp. flour
- 1 1/2 c. chicken broth
- 1 1/2 c. milk (may be partly cream)
- 3/4 c. grated cheese
- salt and freshly ground black pepper to taste
Method
- Saute the onion and pimientos in the butter until the onion is tender but not brown.
- Blend in the flour; gradually add the broth and milk.
- Cook, stirring, until thickened.
- Add the cheese and stir until melted.
- Season with salt and pepper.
