Ingredients

  • 1 small bunch broccoli
  • 1/2 lb. (approximately) fresh mushrooms
  • 1 small onion
  • 2 Tbsp. butter or margarine
  • 4 Tbsp. flour
  • 1 can clear chicken broth
  • 1 pt. half and half or whole milk

Method

  • Cut broccoli in small pieces and steam in small amount of water (do not overcook).
  • Saute mushrooms and chopped onion together in butter (do not brown).
  • Add the flour as if to make gravy, then add chicken broth and cook until thickens.
  • Add broccoli and slowly add half and half.
  • Let simmer a short time to blend.
  • Season with salt and pepper to taste.
