Ingredients

  • 1/4 c. green onion, chopped
  • 1 clove garlic, crushed
  • 1/4 c. celery, chopped
  • 2 c. crawfish tails (cooked)
  • 4 eggs
  • 2 c. milk
  • 1 c. biscuit mix
  • 1 c. Swiss cheese, chopped
  • salt and pepper to taste

Method

  • In a small skillet, saute onion, garlic and celery until clear.
  • Add crawfish, salt and pepper.
  • Simmer for 5 minutes. Grease pie plate.
  • Add crawfish mixture.
  • Beat eggs and milk for 1 minute.
  • Add biscuit mix; mix well.
  • Sprinkle cheese on top of crawfish.
  • Pour biscuit mixture into pie plate.
  • Bake at 350° for 30 to 40 minutes.
  • Cool for 5 minutes.
  • Serve warm.
  • Serves 6.
