Ingredients
- 1 to 1 1/2 sticks margarine
- 1/2 Tbsp. flour
- 1 medium onion, finely chopped
- 2 to 3 Tbsp. green pepper, finely chopped
- 2 to 4 garlic pods, finely chopped
- 1 lb. crawfish tails
- 2 tsp. parsley (fresh or dried)
- 1 tsp. salt and pepper or to taste
- 1 tsp. cayenne pepper or to taste
- cooked rice
Method
- Melt margarine in a large skillet. Add flour and stir until blended. Add onion, green pepper and garlic. Cook until tender. Add crawfish and cook about 10 minutes, stirring occasionally.
- It may even take 15 to 20 minutes to cook. Add spices.
- Cover and simmer until seasonings are blended (very low heat).
- Serve over rice.
