Ingredients

  • 1 to 1 1/2 sticks margarine
  • 1/2 Tbsp. flour
  • 1 medium onion, finely chopped
  • 2 to 3 Tbsp. green pepper, finely chopped
  • 2 to 4 garlic pods, finely chopped
  • 1 lb. crawfish tails
  • 2 tsp. parsley (fresh or dried)
  • 1 tsp. salt and pepper or to taste
  • 1 tsp. cayenne pepper or to taste
  • cooked rice

Method

  • Melt margarine in a large skillet. Add flour and stir until blended. Add onion, green pepper and garlic. Cook until tender. Add crawfish and cook about 10 minutes, stirring occasionally.
  • It may even take 15 to 20 minutes to cook. Add spices.
  • Cover and simmer until seasonings are blended (very low heat).
  • Serve over rice.
