Ingredients
- 4 chicken breasts, diced
- 3 tablespoons butter
- 3/4 cup chopped onion (to taste)
- 1 tablespoon garlic, chopped
- 3 tablespoons cilantro, chopped
- 1 tablespoon curry powder
- 1 (13 1/2 ounce) can coconut milk
- 1/4 - 1/2 teaspoon lime juice (to taste)
Method
- Brown chicken in butter over medium high heat.
- Add onion and garlic, and saute for another 2 minutes.
- Add rest of ingredients, mixing well, and simmer for 5 minutes.
