Ingredients

  • 2 c. fresh cranberries (ground)
  • 1 1/2 c. sugar
  • 1 c. Cool Whip
  • 2 envelopes gelatin (unflavored)
  • 3/4 c. pineapple juice
  • 1 c. Mandarin oranges, drained
  • 1 c. pineapple chunks, drained
  • 1 c. coconut
  • 1 c. sour cream

Method

  • Combine cranberries and sugar; mix thoroughly to dissolve sugar.
  • Sprinkle gelatin over pineapple juice to soften.
  • Place over medium heat; stir until gelatin is dissolved.
  • Add to cranberry mixture; mix well.
  • Stir in fruits; fold in sour cream and Cool Whip.
