Ingredients

  • 2 c. (1 pkg.) chopped cranberries
  • 1 large banana, diced
  • 2/3 c. granulated sugar
  • 2 c. crushed vanilla wafers
  • 1/2 c. margarine or butter
  • 1/2 c. chopped nuts
  • 1 c. confectioners sugar
  • 2 eggs
  • 1 c. whipping cream

Method

  • Mix together cranberries, banana and sugar.
  • Set aside.
  • Place half of crushed vanilla wafers in bottom of an 8 x 8-inch pan. Cream margarine and powdered sugar together.
  • Add eggs and beat well.
  • Spread this mixture over th crushed wafers and top with a layer of cranberry-banana mixture.
  • Spread whipped cream over top and sprinkle nuts over whipped cream.
  • Add remaining crushed wafers over top and chill for at least 4 hours or overnight. Serves 9.
