Ingredients

  • 3 c. flour
  • 3/4 c. sugar
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 c. orange juice
  • 1/2 c. butter, melted
  • 2 eggs, well beaten
  • 1 1/4 c. coarsely chopped cranberries
  • 1/2 c. chopped nuts

Method

  • Preheat oven to 350°.
  • Grease a large loaf pan.
  • Mix all dry ingredients together. Combine the orange juice, butter and eggs together and mix with dry ingredients, mixing just until moistened. Stir in cranberries and nuts.
  • Place mixture into greased pan and bake for 65 minutes or until wooden pick inserted in center of pan comes out clean. Cool 5 minutes. Remove from pan and cool on wire rack.
