Ingredients

  • 6 plums or peaches, quartered, stones removed
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla essence
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon vanilla essence, extra
  • 8 slices sourdough bread
  • 1 tablespoon butter
  • 125g tub PHILADELPHIA Light Spreadable Cream Cheese
  • 1/2 cup cream

Method

  • Place plums, sugar and vanilla in a large non-stick pan and cook over a low heat until peaches are tender and have caramelised.
  • Meanwhile, whisk together the milk, egg and extra vanilla.
  • Dip bread slices into the milk mixture.
  • Heat butter in a non-stick frying pan.
  • Add bread slices and cook for 2-3 minutes each side over a medium heat until golden.
  • Combine the Philly* and cream until smooth.
  • Serve the toast with plums and a dollop of the Philly* cream.
