- 2 qt. POST CRANBERRY ALMOND CRUNCH Cereal
- 1 qt. fat-free milk
- 1-1/4 qt. flour
- 1/4 cup CALUMET Baking Powder
- 1 tsp. salt
- 4 each eggs
- 2 cups applesauce
- 1-1/3 cups brown sugar, firmly packed
- 1/2 cup butter, melted
- 4 tsp. grated orange zest Safeway 1 lb For $0.79 thru 02/09
Method
- Mix cereal and milk; let stand 3 min.
- Combine flour, baking powder and salt in 12-qt.
- bowl of electric mixer fitted with paddle attachment.
- Add cereal mixture along with the eggs, applesauce, brown sugar, butter and orange peel.
- Beat on low speed 2 min.
- or just until dry ingredients are moistened, stopping occasionally to scrape down side of bowl.
- Spoon batter evenly into 48 paper-lined medium muffin cups (or 12 prepared muffin cups for trial recipe), filling each cup 2/3 full
- Bake in 400 degrees F-standard oven for 18 to 20 min.
- or until tops are golden brown and toothpick inserted in centers comes out clean.
