Ingredients

  • 2 qt. POST CRANBERRY ALMOND CRUNCH Cereal
  • 1 qt. fat-free milk
  • 1-1/4 qt. flour
  • 1/4 cup CALUMET Baking Powder
  • 1 tsp. salt
  • 4 each eggs
  • 2 cups applesauce
  • 1-1/3 cups brown sugar, firmly packed
  • 1/2 cup butter, melted
  • 4 tsp. grated orange zest Safeway 1 lb For $0.79 thru 02/09

Method

  • Mix cereal and milk; let stand 3 min.
  • Combine flour, baking powder and salt in 12-qt.
  • bowl of electric mixer fitted with paddle attachment.
  • Add cereal mixture along with the eggs, applesauce, brown sugar, butter and orange peel.
  • Beat on low speed 2 min.
  • or just until dry ingredients are moistened, stopping occasionally to scrape down side of bowl.
  • Spoon batter evenly into 48 paper-lined medium muffin cups (or 12 prepared muffin cups for trial recipe), filling each cup 2/3 full
  • Bake in 400 degrees F-standard oven for 18 to 20 min.
  • or until tops are golden brown and toothpick inserted in centers comes out clean.
