Ingredients

  • 1 3/4 c. flour
  • 5 Tbsp. sugar, divided
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 3/4 c. orange juice
  • 1/3 c. oil
  • 1 c. fresh cranberries

Method

  • Stir together flour, 2 tablespoons of sugar, baking powder and salt.
  • Make a well in the center.
  • In a small bowl, beat egg slightly; stir in orange juice and oil.
  • Coarsely chop the cranberries and toss with 2 tablespoons of sugar.
  • Add egg mixture to dry ingredients and stir just until moistened; fold in cranberries.
  • Fill muffin tins 3/4 full.
  • Sprinkle tops with remaining sugar.
  • Bake at 400° for 18 to 20 minutes or until golden brown.
