Ingredients
- 1 3/4 c. flour
- 5 Tbsp. sugar, divided
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 3/4 c. orange juice
- 1/3 c. oil
- 1 c. fresh cranberries
Method
- Stir together flour, 2 tablespoons of sugar, baking powder and salt.
- Make a well in the center.
- In a small bowl, beat egg slightly; stir in orange juice and oil.
- Coarsely chop the cranberries and toss with 2 tablespoons of sugar.
- Add egg mixture to dry ingredients and stir just until moistened; fold in cranberries.
- Fill muffin tins 3/4 full.
- Sprinkle tops with remaining sugar.
- Bake at 400° for 18 to 20 minutes or until golden brown.
