Ingredients

  • 2 c. flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 1 tsp. slat
  • 1 c. chopped nuts
  • 3/4 c. orange juice
  • 1 Tbsp. grated orange rind
  • 1 egg, well beaten
  • 1/4 c. oil
  • 1 c. raw cranberries, halved

Method

  • Mix sugar
  • with
  • cranberries;
  • let
  • stand.
  • Mix
  • flour, baking powder,
  • soda and salt and sift.
  • Beat together orange juice, rind, egg and oil.
  • Stir this into dry mixture, mixing just
  • to dampen.
  • Carefully fold in chopped nuts, cranberries and
  • sugar. Spoon
  • batter
  • into well greased, wax paper lined loaf
  • pan
  • and let stand 20 minutes before baking in 350° oven for about 1 hour. Test with toothpick.
