Ingredients
- 4 oz. finely diced pork fat (1 c.)
- 1 c. corn meal
- 1 c. all-purpose flour
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 c. buttermilk
- 2 beaten eggs
Method
- Fry pork fat until crisp.
- Drain, reserving 1/3 cup of drippings.
- In large bowl, mix together corn meal, flour, baking soda and salt.
- Add buttermilk, eggs and drippings.
- Beat until smooth.
- Stir in cracklings.
- Bake in a greased 10-inch skillet at 425° until done (about 15 to 20 minutes).
- Serve warm.
- Makes 6 servings.
