Ingredients
- 2 c. cornmeal
- 1/2 tsp. salt
- 1 c. water
- 1 c. diced cracklings
- 1 Tbsp. butter
Method
- Preheat oven to 400°.
- Sift meal and salt.
- Stir in water and cracklings.
- Melt butter in a 9-inch cast-iron skillet.
- Pour in batter and spread over melted butter.
- Cook for 25 minutes or until lightly brown.
- Cut in wedges or break into pieces to serve.
