Ingredients
- 1 stalk finely chopped celery
- 1 c. chopped onion
- 1/2 c. margarine
- 1/2 c. flour
- 1 (12 oz.) can evaporated milk
- 2 egg yolks
- 1 tsp. salt
- 1/2 tsp. red pepper
- 1 lb. white crabmeat
- 1/4 tsp. black pepper
- 1/2 lb. grated Cheddar
Method
- Saute celery and onions in butter until wilted.
- Blend flour in well.
- Add milk gradually, stirring constantly.
- Add egg yolks, salt, red pepper and black pepper; cook 5 minutes.
- Place crabmeat in a casserole dish and mix in cooked sauce.
- Sprinkle with cheese.
- Bake at 375° for 10 to 15 minutes or until light brown.
