Ingredients

  • 1 stalk finely chopped celery
  • 1 c. chopped onion
  • 1/2 c. margarine
  • 1/2 c. flour
  • 1 (12 oz.) can evaporated milk
  • 2 egg yolks
  • 1 tsp. salt
  • 1/2 tsp. red pepper
  • 1 lb. white crabmeat
  • 1/4 tsp. black pepper
  • 1/2 lb. grated Cheddar

Method

  • Saute celery and onions in butter until wilted.
  • Blend flour in well.
  • Add milk gradually, stirring constantly.
  • Add egg yolks, salt, red pepper and black pepper; cook 5 minutes.
  • Place crabmeat in a casserole dish and mix in cooked sauce.
  • Sprinkle with cheese.
  • Bake at 375° for 10 to 15 minutes or until light brown.
