Ingredients

  • 1 lb. crab meat
  • 1 1/2 tsp. salt
  • 1 tsp. white pepper
  • 1 tsp. English dry mustard
  • 2 tsp. Worcestershire sauce
  • 1 egg yolk
  • 1 soup spoon cream sauce or mayonnaise
  • 1 tsp. chopped parsley

Method

  • Take 1 pound crab meat for each four crab cakes.
  • Put crab meat into a mixing bowl.
  • Add the salt, pepper, mustard, Worcestershire sauce, egg yolk, cream sauce or mayonnaise and the parsley.
  • Mix well; make four crab cakes.
  • Press hard together. Dip into flour, then into beaten eggs, then into breadcrumbs.
  • Fry them in hot grease.
