Ingredients
- 1 lb. crab meat
- 1 1/2 tsp. salt
- 1 tsp. white pepper
- 1 tsp. English dry mustard
- 2 tsp. Worcestershire sauce
- 1 egg yolk
- 1 soup spoon cream sauce or mayonnaise
- 1 tsp. chopped parsley
Method
- Take 1 pound crab meat for each four crab cakes.
- Put crab meat into a mixing bowl.
- Add the salt, pepper, mustard, Worcestershire sauce, egg yolk, cream sauce or mayonnaise and the parsley.
- Mix well; make four crab cakes.
- Press hard together. Dip into flour, then into beaten eggs, then into breadcrumbs.
- Fry them in hot grease.
