Ingredients
- 1 3/4 c. water
- 1/2 c. long grain rice
- 2 c. milk
- 2 large eggs, beaten
- 1/2 c. sugar
- 1 tsp. vanilla
- 1/2 c. raisins (optional)
- cinnamon
Method
- Bring water to boil.
- Stir in rice; cover and simmer until all water is absorbed.
- Add milk and boil gently, stirring occasionally until mixture thickens slightly, about 5 minutes. Combine eggs, sugar and vanilla in bowl.
- Gradually stir in rice mixture.
- Add raisins, if desired, then pour into a greased 1 1/2-quart casserole.
- Sprinkle cinnamon over the top.
- Place casserole in pan containing about 1-inch of hot water.
- Set both in oven preheated to 350°.
- Bake, uncovered, for 45 to 50 minutes. Serve warm or cold.
- Store, covered, in refrigerator.
