Ingredients

  • 1 3/4 c. water
  • 1/2 c. long grain rice
  • 2 c. milk
  • 2 large eggs, beaten
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • 1/2 c. raisins (optional)
  • cinnamon

Method

  • Bring water to boil.
  • Stir in rice; cover and simmer until all water is absorbed.
  • Add milk and boil gently, stirring occasionally until mixture thickens slightly, about 5 minutes. Combine eggs, sugar and vanilla in bowl.
  • Gradually stir in rice mixture.
  • Add raisins, if desired, then pour into a greased 1 1/2-quart casserole.
  • Sprinkle cinnamon over the top.
  • Place casserole in pan containing about 1-inch of hot water.
  • Set both in oven preheated to 350°.
  • Bake, uncovered, for 45 to 50 minutes. Serve warm or cold.
  • Store, covered, in refrigerator.
