Ingredients
- 1 lb. lump crabmeat
- 1 egg
- 2 heaping Tbsp. mayo
- 1/2 tsp. baking powder
- 1 Tbsp. mustard
- 2 shakes Old Bay seasoning (enough to taste)
- 2 Tbsp. milk
- 2 to 3 Tbsp. parsley (fresh or dried)
- black pepper to taste
- 2 slices bread, without crusts
Method
- Blend the egg, mayo, baking powder, mustard and Old Bay seasoning.
- Soak the bread slices in the milk, parsley and black pepper mixture for 5 minutes.
- Add all ingredients to the first mixture.
- Add crabmeat last.
- Mix with fork and form into cakes. Broil 8 to 10 minutes or bake at 400° for 20 minutes.
