Ingredients

  • 1 lb. lump crabmeat
  • 1 egg
  • 2 heaping Tbsp. mayo
  • 1/2 tsp. baking powder
  • 1 Tbsp. mustard
  • 2 shakes Old Bay seasoning (enough to taste)
  • 2 Tbsp. milk
  • 2 to 3 Tbsp. parsley (fresh or dried)
  • black pepper to taste
  • 2 slices bread, without crusts

Method

  • Blend the egg, mayo, baking powder, mustard and Old Bay seasoning.
  • Soak the bread slices in the milk, parsley and black pepper mixture for 5 minutes.
  • Add all ingredients to the first mixture.
  • Add crabmeat last.
  • Mix with fork and form into cakes. Broil 8 to 10 minutes or bake at 400° for 20 minutes.
