Ingredients

  • 1 12 lbs potatoes
  • 1 lb crabmeat
  • 2 ounces fresh dill, finely chopped
  • 2 ounces fresh chives, finely chopped
  • 4 tablespoons light mayonnaise
  • cooking spray

Method

  • Peel and roughly chop the potatoes.
  • Boil in a large pan of salted water for 10-12 minutes or until just tender.
  • Drain and mash and allow to cool completely.
  • Combine the potatoes, crabmeat, herbs and mayonnaise in a mixing bowl.
  • Shape into 8 cakes.
  • Cover and chill for 6-8 hours.
  • Spray a large non stick frying pan with cooking spray.
  • Cook the cakes for 3-4 minutes on each side or until lightly browned.
  • Serve immediately with a green side salad.
