Ingredients

  • 1 (11 ounce) can white shoepeg corn
  • 1 (15 ounce) can black-eyed peas
  • 1 avocado, chopped
  • 2 roma tomatoes, chopped (or hot house tomatoes)
  • 23 cup chopped cilantro
  • 23 cup chopped green onion
  • 14 cup olive oil
  • 14 cup red wine vinegar
  • 2 garlic cloves, pressed
  • 34 teaspoon salt
  • 18 teaspoon pepper
  • 1 teaspoon cumin

Method

  • Mix caviar ingredients in a bowl.
  • Blend the dressing ingredients in blender.
  • Pour dressing over caviar, chill at least one hour and serve with tortilla chips.
