Ingredients

  • 1 12 tablespoons margarine, plus
  • 1 12 teaspoons margarine
  • 3 cups chopped onions
  • 8 large granny smith apples, cored and chopped
  • 2 ripe bananas, chopped
  • 5 garlic cloves, minced
  • 4 tablespoons curry paste
  • white wine
  • 1 teaspoon turmeric
  • 2 cups clear broth
  • 12 teaspoon salt
  • 34 teaspoon pepper
  • 2 cups couscous

Method

  • brown couscous in 1/4cup oil, in another pan.melt 1 teaspoon margarine, over medium heat, and saute onion,after 10 minutes add remaining mrgarine,apple,garlic, and banana,stir often 5 minutes until tender, stir in curry and wine,cook 2 more minutes,add broth,salt and pepper.
  • cook 2 to 3 minutes,stir in couscous,stir,fluf it up,let set 3 minutes,taste.
