Ingredients

  • 500 grams Broad Beans In Pods
  • 1 tbsp Grated Parmesan
  • 1 tbsp Tzatziki Dip
  • 1/4 Zest And Juice Lemon
  • 1 pinch Salt And Coarse Black Pepper
  • 4 slice Prosciutto
  • 2 Ciabatta

Method

  • Remove the beans from the pod.
  • Bring to the boil in a pan of salted water and simmer for 5 minutes.
  • Drain and allow to cool.
  • Shell the beans, discard the shells and place the beans in a bowl.
  • Add the salt, pepper, lemon juice and zest, Parmesan and tzatziki.
  • Blend with a hand held blender.
  • slice the ciabatta in half, drizzle the olive oil on each side and toast under the grill.
  • Serve the dip with the toasted ciabatta and prosciutto.
  • The prosciutto adds a bit of sweetness which balances the dip so it's a perfect combination.
