Ingredients
- 800g courgettes, diced
- 2 potatoes, diced
- 1 onion finely chopped
- 250g bacon
- 1 tsp fresh basil
- 100g goat's cheese
Method
- Place diced courgettes, potatoes, onion and bacon in a large pot of water. Add basil and seasoning. Bring to the boil and simmer untill vegtables are cooked. Add goat's cheese and simmer for a further 5 mins. Remove 1/2 of the liquid and blend the remaining vegtables. Simmer for another 5 mins and serve warm.
