Ingredients
- 2 lb. sliced yellow squash (green too)
- 1/2 c. chopped onion
- 1/2 c. water
- 1 (8 oz.) sour cream
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. basil
- 1 c. soft bread crumbs
- 1/2 c. shredded Cheddar cheese
- 1/3 c. melted butter
- 1/2 tsp. paprika
- 8 slices bacon, cooked and crumbled
Method
- Cook squash and onion in 1/2 cup boiling water until tender; drain and mash.
- Combine squash mixture, sour cream, salt, pepper and basil.
- Pour into greased 2-quart casserole.
- Combine breadcrumbs, cheese, butter and paprika.
- Sprinkle over squash mixture.
- Top with bacon.
- Bake at 300° for 20 minutes.
- Makes 6 servings.
