Ingredients

  • 2 lb. sliced yellow squash (green too)
  • 1/2 c. chopped onion
  • 1/2 c. water
  • 1 (8 oz.) sour cream
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. basil
  • 1 c. soft bread crumbs
  • 1/2 c. shredded Cheddar cheese
  • 1/3 c. melted butter
  • 1/2 tsp. paprika
  • 8 slices bacon, cooked and crumbled

Method

  • Cook squash and onion in 1/2 cup boiling water until tender; drain and mash.
  • Combine squash mixture, sour cream, salt, pepper and basil.
  • Pour into greased 2-quart casserole.
  • Combine breadcrumbs, cheese, butter and paprika.
  • Sprinkle over squash mixture.
  • Top with bacon.
  • Bake at 300° for 20 minutes.
  • Makes 6 servings.
