Ingredients

  • 1 2/3 pounds ground chicken
  • 1/2 cup sweet corn canned
  • 1/2 cup dried breadcrumbs
  • 1 egg lightly beaten
  • 6 green onions chopped
  • 1 tablespoon tomato paste
  • 1 red chili pepper small, chopped
  • tomato salsa
  • salad

Method

  • Preheat the oven to 350°F. Place 8 x 4-inch loaf pan on a foil-lined baking pan.
  • Combine all ingredients in a large bowl. Season to taste. Press into prepared pan.
  • Bake for 50-55 mins, until cooked through, draining off any fat. Let stand in pan for 5 mins. Unmold and slice. Serve with salad and tomato salsa.
