Ingredients

  • 1/3 cup shredded carrot
  • 1/3 cup thinly sliced celery
  • 2 Tbsp. finely chopped green pepper
  • 2 Tbsp. finely chopped onion
  • 1/4 cup (1/2 stick) butter or margarine
  • 1/3 cup flour
  • 1 tsp. salt
  • dash black pepper
  • 5 cups milk
  • 1 pkg. (8 oz.) CRACKER BARREL Sharp Cheddar Cheese, shredded (2 cups)

Method

  • Cook vegetables in butter in large saucepan on medium heat until tender, stirring frequently.
  • Add flour and seasonings; mix well.
  • Cook 2 minutes or until bubbly, stirring frequently.
  • Gradually add milk, stirring until well blended.
  • Cook until mixture boils and thickens, stirring constantly.
  • Reduce heat to low; simmer 5 minutes.
  • Add cheese; cook until cheese is melted and mixture is heated through, stirring constantly.
  • Do not boil.
