Ingredients

  • 2 to 3 lb. fryer parts
  • 2 onions, finely chopped
  • 2 green peppers, chopped
  • 1 to 2 garlic cloves, chopped
  • 1 generous tsp. salt
  • 1/2 tsp. white pepper
  • 2 (16 oz.) cans tomatoes
  • 1 tsp. parsley
  • 1/2 tsp. powdered thyme
  • 2 c. rice, cooked
  • 3 large Tbsp. currants
  • 1/4 lb. slivered or whole almonds, toasted

Method

  • Wash and cut up chicken ready for cooking.
  • Put in salt, soda and water.
  • Let soak in refrigerator overnight.
  • Take out of water and coat with self-rising flour.
  • Fry in Crisco oil in deep fryer until golden brown.
  • Will be crisp and juicy.
