Ingredients

  • 12 eggs, well beaten
  • 9 slices white bread, crusts removed and cut into 1/2-inch squares
  • 4 Tbsp. butter, cut in small cubes
  • 6 scallions or green onions, chopped (including tops)
  • 3 c. milk
  • 1/4 c. chopped green pepper
  • 2 Tbsp. chopped pimento
  • 2 lb. sausage, browned, drained and crumbled*
  • 2 c. grated Cheddar cheese
  • 1/4 tsp. pepper

Method

  • Combine all ingredients in a large bowl and blend well.
  • Pour mixture into buttered 9 x 13-inch casserole dish and refrigerate, covered, 8 hours or overnight. Bake uncovered at 300° for 1 hour.
