Ingredients
- 5 large potatoes, cooked with skins on in salt
- 1/4 lb. Cheddar cheese, cubed
- 1 medium onion, diced
- 1/2 green pepper, diced
- 1/2 c. chopped fresh parsley or 3 Tbsp. parsley flakes
- 1/2 slice bread, cubed
- 1/2 c. melted butter
- 1/2 c. milk
- 1/2 c. crushed cornflakes
Method
- Chop and mix first 6 ingredients and place in casserole.
- Pour butter and milk over top.
- Put cornflakes on top.
- Bake for 1/2 hour at 400°.
