Ingredients
- 3 Tbsp. canola oil
- 1 large onion, chopped
- 1 lb. mushrooms, chopped
- 2 cloves garlic, minced
- 1 lb. low-fat cottage cheese
- 3 egg whites
- 1 tsp. salt
- 1 tsp. basil or oregano
- dash of pepper
- 1/2 c. bread crumbs
Method
- Saute onion in oil in large frying pan on medium heat for 5 minutes.
- Add the chopped mushrooms and garlic and saute 10 minutes longer.
- Stir the cottage cheese into the mushroom mixture.
- Add the remaining ingredients and mix until well blended.
- Spoon into a well-greased (spray) 9 x 5-inch loaf pan. Bake at 375° for 50 to 55 minutes or until set.
- Makes 4 to 6 servings.
