Ingredients

  • 3 Tbsp. canola oil
  • 1 large onion, chopped
  • 1 lb. mushrooms, chopped
  • 2 cloves garlic, minced
  • 1 lb. low-fat cottage cheese
  • 3 egg whites
  • 1 tsp. salt
  • 1 tsp. basil or oregano
  • dash of pepper
  • 1/2 c. bread crumbs

Method

  • Saute onion in oil in large frying pan on medium heat for 5 minutes.
  • Add the chopped mushrooms and garlic and saute 10 minutes longer.
  • Stir the cottage cheese into the mushroom mixture.
  • Add the remaining ingredients and mix until well blended.
  • Spoon into a well-greased (spray) 9 x 5-inch loaf pan. Bake at 375° for 50 to 55 minutes or until set.
  • Makes 4 to 6 servings.
