Ingredients

  • 6 eggs
  • 1 cup sugar
  • 1 cottage cheese
  • 9/16 cup flour

Method

  • Whisk egg yolks and sugar until mixture is smooth and creamy.
  • Mash cottage cheese with a fork and stir into the egg yolk mixture.
  • Add flour and stir well.
  • Preheat oven to 180°C (approximately 350°F).
  • Beat egg whites with a pinch of salt until stiff peaks form.
  • Fold egg whites into batter.
  • Place cupcake liners in muffin pan.
  • Fill each well of muffin pan with batter, about 3/4 full.
  • Bake in preheated oven for 25-30 minutes.
  • Tip: If desired, add 1 teaspoon cinnamon, or 1 teaspoon lemon or orange zest to the batter for flavor.
