- 2 large chicken breasts (more, if desired)
- 2 c. rice (pre-cooked)
- 1/2 c. chopped celery
- 1/2 c. chopped bell pepper
- 1 medium onion
- 2 carrots, cubed
- 1/2 tsp. pepper
- 1/4 tsp. oregano
- 1 tsp. salt
- 1/2 bunch cilantro, chopped
- 1 tsp. achiote (a type of food coloring)
- 2 Tbsp. cooking oil
- 1 small can English peas
Method
- Cook chicken in water with salt, pepper, celery, a bit of bell pepper and a garlic bud.
- (These are not the chopped ingredients listed.)
- Save the broth.
- Remove chicken from broth and cool. Remove from bone and break into small pieces; set aside.
