Ingredients

  • 2 large chicken breasts (more, if desired)
  • 2 c. rice (pre-cooked)
  • 1/2 c. chopped celery
  • 1/2 c. chopped bell pepper
  • 1 medium onion
  • 2 carrots, cubed
  • 1/2 tsp. pepper
  • 1/4 tsp. oregano
  • 1 tsp. salt
  • 1/2 bunch cilantro, chopped
  • 1 tsp. achiote (a type of food coloring)
  • 2 Tbsp. cooking oil
  • 1 small can English peas

Method

  • Cook chicken in water with salt, pepper, celery, a bit of bell pepper and a garlic bud.
  • (These are not the chopped ingredients listed.)
  • Save the broth.
  • Remove chicken from broth and cool. Remove from bone and break into small pieces; set aside.
