Ingredients

  • 25 vanilla wafers
  • 12 oz. quality white chocolate, chopped
  • 1/3 to 1/2 cup fresh blueberries
  • 1/3 to 1/2 cup fresh raspberries

Method

  • Line an 8x8 baking pan with foil. Arrange vanilla wafers in a single layer on the bottom of the pan.
  • In a medium saucepan melt 8 oz. of the white chocolate over low heat. Place remaining chopped in a bowl and pour melted chocolate over the top. Stir until smooth.
  • Pour melted chocolate over cookies and use a spatula to spread evenly. Cool five minutes.
  • Gently press berries into chocolate and refrigerate until firm.
