Ingredients

  • 1 1/2 c. sugar
  • 1 c. shortening
  • 2 eggs
  • 1/4 tsp. lemon extract or 1 tsp. lemon juice
  • 2 3/4 c. soft unbleached white flour or cake flour
  • 1 c. cornmeal
  • 1 tsp. baking powder
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/2 to 1 c. raisins

Method

  • In large mixer bowl, beat sugar, shortening, eggs and lemon extract or lemon juice with electric mixer until blended.
  • In bowl, stir together flour, cornmeal, baking powder, nutmeg and salt.
  • Add to shortening mixture and beat thoroughly.
  • Stir in raisins.
  • Drop from teaspoon 2-inches apart onto greased cookie sheet.
  • Bake in 375° oven for 10 to 12 minutes.
  • Cool.
  • Makes 48 cookies.
