Ingredients
- 1 1/2 c. sugar
- 1 c. shortening
- 2 eggs
- 1/4 tsp. lemon extract or 1 tsp. lemon juice
- 2 3/4 c. soft unbleached white flour or cake flour
- 1 c. cornmeal
- 1 tsp. baking powder
- 1 tsp. nutmeg
- 1/2 tsp. salt
- 1/2 to 1 c. raisins
Method
- In large mixer bowl, beat sugar, shortening, eggs and lemon extract or lemon juice with electric mixer until blended.
- In bowl, stir together flour, cornmeal, baking powder, nutmeg and salt.
- Add to shortening mixture and beat thoroughly.
- Stir in raisins.
- Drop from teaspoon 2-inches apart onto greased cookie sheet.
- Bake in 375° oven for 10 to 12 minutes.
- Cool.
- Makes 48 cookies.
