Ingredients
- 1 c. cornmeal
- 1 1/2 c. bread crumbs
- 1/4 tsp. celery seed
- 1/4 tsp. thyme
- 1/4 tsp. nutmeg
- 4 chicken legs, whole
- 1 c. flour
- 4 beaten eggs
- salt and pepper
Method
- Preheat oil in fryer to 350°.
- Mix cornmeal, bread crumbs, herbs and spices in bowl; set aside.
- Place chicken in large pan, cover with water, season and bring to a boil.
- Skim water and cook, partially covered 20 to 22 minutes over low heat.
- Remove chicken from pan and trim skin away.
- Dredge chicken with flour and dip into beaten eggs coated with cornmeal.
- Deep fry 6 to 7 minutes.
