Ingredients

  • 1 c. cornmeal
  • 1 1/2 c. bread crumbs
  • 1/4 tsp. celery seed
  • 1/4 tsp. thyme
  • 1/4 tsp. nutmeg
  • 4 chicken legs, whole
  • 1 c. flour
  • 4 beaten eggs
  • salt and pepper

Method

  • Preheat oil in fryer to 350°.
  • Mix cornmeal, bread crumbs, herbs and spices in bowl; set aside.
  • Place chicken in large pan, cover with water, season and bring to a boil.
  • Skim water and cook, partially covered 20 to 22 minutes over low heat.
  • Remove chicken from pan and trim skin away.
  • Dredge chicken with flour and dip into beaten eggs coated with cornmeal.
  • Deep fry 6 to 7 minutes.
