Ingredients
- 1 can corned beef
- 1 can creamed corn
- 1 large can tomatoes, chopped
- 1 medium onion, chopped
- salt and pepper to taste
- 1/2 tsp. hot sauce (optional)
- 2 tsp. cooking oil
Method
- Saute chopped onion in hot oil in skillet, do not brown. Break up can of corned beef, add to onions, heat through.
- Add tomatoes and simmer 10 to 15 minutes.
- Add creamed corn and cook additional 10 minutes.
- Season with salt and pepper and hot sauce, if desired.
- Serve over mashed potatoes or toast.
- Serves 4.
