Ingredients

  • 1 can corned beef
  • 1 can creamed corn
  • 1 large can tomatoes, chopped
  • 1 medium onion, chopped
  • salt and pepper to taste
  • 1/2 tsp. hot sauce (optional)
  • 2 tsp. cooking oil

Method

  • Saute chopped onion in hot oil in skillet, do not brown. Break up can of corned beef, add to onions, heat through.
  • Add tomatoes and simmer 10 to 15 minutes.
  • Add creamed corn and cook additional 10 minutes.
  • Season with salt and pepper and hot sauce, if desired.
  • Serve over mashed potatoes or toast.
  • Serves 4.
