Ingredients
- 1 pan cornbread
- 2 cans pinto beans, drained
- 1 can whole kernel corn, drained
- 1 onion, chopped
- 1 lb. ground beef
- 1 can Ro-Tel tomatoes
- 1 c. grated cheese (your preference)
Method
- Brown ground beef and onion.
- Drain.
- Crumble cornbread in bottom of baking dish.
- Mix beans, corn, beef mixture and tomatoes and pour over cornbread.
- Sprinkle cheese on top and bake at 350° until bubbly.
