Ingredients

  • 1 pound sweet potato peeled, cubed
  • 2 eggplants peeled, cubed
  • 2 tablespoons olive oil
  • 2 chicken breasts halved horizontally, pounded
  • 1/2 cup tomato sauce
  • 1 tablespoon barbecue sauce
  • 1/4 cup cheese shredded
  • 1 slice bacon finely chopped
  • fresh basil leaves to serve

Method

  • Preheat oven to 400°F. Toss sweet potato and eggplant with 1 tbsp oil. Season to taste then bake for 15-20 mins, or until sweet potato is golden and almost tender.
  • Meanwhile, in a large frying pan, heat remaining oil over high heat and cook chicken 1-2 mins per side, or until golden. Transfer to dish with vegetables. Combine tomato and barbecue sauce then pour over chicken and vegetables. Sprinkle with cheese and bacon and bake for 10-15 mins, until chicken is cooked through and cheese melts. Sprinkle with basil to serve.
