Ingredients

  • 3 c. fresh or frozen corn kernels
  • 1/2 c. grated onion
  • 2 Tbsp. butter or margarine
  • 1/2 c. sliced green onions (scallions)
  • 4 c. milk
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • toast for garnish (French baguette, directions follow)

Method

  • Melt butter in a pot; add onion and scallions.
  • Saute over medium heat for about 2 minutes.
  • Add the milk, salt and pepper and bring to a boil.
  • When soup reaches boiling point, add corn and stir.
  • Remove from heat and cover to steep 2 to 3 minutes.
