Ingredients
- 3 c. fresh or frozen corn kernels
- 1/2 c. grated onion
- 2 Tbsp. butter or margarine
- 1/2 c. sliced green onions (scallions)
- 4 c. milk
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- toast for garnish (French baguette, directions follow)
Method
- Melt butter in a pot; add onion and scallions.
- Saute over medium heat for about 2 minutes.
- Add the milk, salt and pepper and bring to a boil.
- When soup reaches boiling point, add corn and stir.
- Remove from heat and cover to steep 2 to 3 minutes.
