Ingredients

  • 1 large onion, chopped
  • 2 medium green peppers, chopped
  • 1/2 c. butter or margarine
  • 1/4 c. all-purpose flour
  • 2 c. frozen or canned corn
  • 2 c. long grain rice
  • 1 (14 1/2 oz.) can diced tomatoes with liquid
  • 1 tsp. pepper
  • 4 hard-boiled eggs, chopped
  • 2 1/2 c. (10 oz.) shredded sharp Cheddar cheese, divided
  • 2 Tbsp. Worcestershire sauce
  • 2 to 3 tsp. hot pepper sauce
  • 2 tsp. salt

Method

  • In large skillet, saute onion and peppers in butter until tender.
  • Stir in flour.
  • Remove from heat.
  • Add remaining ingredients, except for 1/2 cup cheese.
  • Pour into a greased 2 1/2-quart baking dish.
  • Bake, uncovered, at 350° for 45 minutes. Top with remaining cheese.
  • Let stand 5 minutes.
  • Makes 10 to 12 servings.
