- 1 large onion, chopped
- 2 medium green peppers, chopped
- 1/2 c. butter or margarine
- 1/4 c. all-purpose flour
- 2 c. frozen or canned corn
- 2 c. long grain rice
- 1 (14 1/2 oz.) can diced tomatoes with liquid
- 1 tsp. pepper
- 4 hard-boiled eggs, chopped
- 2 1/2 c. (10 oz.) shredded sharp Cheddar cheese, divided
- 2 Tbsp. Worcestershire sauce
- 2 to 3 tsp. hot pepper sauce
- 2 tsp. salt
Method
- In large skillet, saute onion and peppers in butter until tender.
- Stir in flour.
- Remove from heat.
- Add remaining ingredients, except for 1/2 cup cheese.
- Pour into a greased 2 1/2-quart baking dish.
- Bake, uncovered, at 350° for 45 minutes. Top with remaining cheese.
- Let stand 5 minutes.
- Makes 10 to 12 servings.
