Ingredients

  • 2 tbsp oil
  • 1 None chicken (about 1.2kg), cut into 6 pieces
  • 1 None yellow and 1 green pepper, deseeded and chopped
  • 1 None courgette, chopped
  • 4 None tomatoes, chopped
  • 2 sprigs fresh rosemary
  • 2 None bay leaves
  • 250 ml dry white wine

Method

  • Soak the clay pot in cold water for 15 mins. Heat the oil in a large skillet on medium-high heat. Add the chicken and cook until browned on both sides. Season with salt and black pepper.
  • Place the chicken in the pot along with the peppers, zucchini, tomatoes, rosemary and bay leaves. Add the wine. Cover and place in a cold oven.
  • Heat the oven to 400°F. Roast for 45 mins. Remove cover and roast for 15 mins longer or until chicken is cooked through.
