Ingredients

  • 1/2 cup milk
  • 1 egg
  • 2 13/16 tablespoons butter
  • 2 3/4 cups flour
  • salt
  • 4 tablespoons granulated sugar
  • 1 tablespoon active dry yeast instant
  • 4 15/16 tablespoons butter melted
  • 11/16 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 6 7/8 tablespoons cream cheese
  • 3 1/2 tablespoons butter room temperature
  • 2 1/2 cups powdered sugar
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract

Method

  • Preheat the oven to 200 degrees Celsius.
  • Mix together all ingredients for the dough (milk, egg, 40 grams butter, flour, pinch of salt, granulated sugar, and yeast) and knead for 15 minutes. Let sit in a warm spot for 1 1/2 to 2 hours, until doubled in size.
  • Once doubled, knead the dough a little more and roll out into a rectangle.
  • Brush the dough with melted butter.
  • Stir together the 100 grams of brown sugar and 8 grams of ground cinnamon. Sprinkle this mixture over the dough.
  • Roll the dough up into a tube and cut 2 1/2-centimeter wheels off the tube. Lay the wheels out on a baking tray to rise another 25 minutes.
  • Once risen, bake for 12-15 minutes until golden.
  • For the topping, whisk together the cream cheese, 50 grams of room temperature butter, powdered sugar, granulated sugar, and vanilla extract, and drizzle that mixture over the hot cinnamon rolls when they come out of the oven.
  • Serve warm.
