Ingredients
- 2/3 c. green pepper, chopped
- 2/3 c. red pepper, chopped
- 1/3 c. onion, chopped
- 3/4 c. butter
- 2 1/2 c. cooked long grained rice
- salt and white pepper to taste
Method
- Tear assorted greens such as romaine, endive, butter lettuce and spinach into bite size pieces.
- Put into a glass bowl and toss.
- Serve with honey Dijon dressing.
