Ingredients
- 1/4 c. chopped green pepper
- 1/4 c. chopped onion
- 3 Tbsp. butter
- 2 Tbsp. flour
- 1 c. milk
- salt and pepper to taste
- 2 c. cooked, sliced potatoes, drained
- 1/2 c. grated cheese
Method
- Saute green pepper and onion in butter until browned.
- Add flour and stir.
- Add milk; stir until smooth and thickened.
- Add salt and pepper.
- Place potatoes in buttered casserole dish.
- Pour sauce mixture over potatoes; mix slightly.
- Sprinkle with cheese. Bake at 400° for 25 to 30 minutes.
