Ingredients

  • 1/4 c. chopped green pepper
  • 1/4 c. chopped onion
  • 3 Tbsp. butter
  • 2 Tbsp. flour
  • 1 c. milk
  • salt and pepper to taste
  • 2 c. cooked, sliced potatoes, drained
  • 1/2 c. grated cheese

Method

  • Saute green pepper and onion in butter until browned.
  • Add flour and stir.
  • Add milk; stir until smooth and thickened.
  • Add salt and pepper.
  • Place potatoes in buttered casserole dish.
  • Pour sauce mixture over potatoes; mix slightly.
  • Sprinkle with cheese. Bake at 400° for 25 to 30 minutes.
