Ingredients
- 2 medium onions, sliced
- 3 Tbsp. butter or margarine
- 2 lb. zucchini, sliced thin
- 1 can tomatoes
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 Tbsp. grated Parmesan cheese
Method
- Brown onions in butter or margarine; add zucchini.
- Cover and cook 10 minutes.
- Drain tomatoes and cut halves.
- Combine all ingredients except cheese in a 2-quart casserole.
- Sprinkle cheese over top.
- Bake at 375° for 15 minutes.
- Serves 6.
