Ingredients

  • 1 lb couscous
  • 1 None lemon, zested and juiced
  • 3 tbsp white wine vinegar
  • None Pinch sugar
  • 4 tbsp olive oil
  • 4 sprigs mint, 3 chopped
  • 1 None cucumber, peeled and cubed
  • 8 None small tomatoes, seeded and diced
  • None Pinch cumin

Method

  • Cook the couscous according to the package directions, drain and rinse with cold water.
  • Mix 2 tbsp of lemon juice, the vinegar, 3 tbsp of water and a pinch of sugar. Season to taste and drizzle the oil into the mixture. Stir in half of the chopped mint. Mix the couscous and half of the vinaigrette in a large bowl. Add the cucumber, tomatoes, remaining mint and cumin. Serve garnished with lemon zest and mint leaves, with the rest of the vinaigrette on the side.
