Ingredients
- 1 lb couscous
- 1 None lemon, zested and juiced
- 3 tbsp white wine vinegar
- None Pinch sugar
- 4 tbsp olive oil
- 4 sprigs mint, 3 chopped
- 1 None cucumber, peeled and cubed
- 8 None small tomatoes, seeded and diced
- None Pinch cumin
Method
- Cook the couscous according to the package directions, drain and rinse with cold water.
- Mix 2 tbsp of lemon juice, the vinegar, 3 tbsp of water and a pinch of sugar. Season to taste and drizzle the oil into the mixture. Stir in half of the chopped mint. Mix the couscous and half of the vinaigrette in a large bowl. Add the cucumber, tomatoes, remaining mint and cumin. Serve garnished with lemon zest and mint leaves, with the rest of the vinaigrette on the side.
