Ingredients

  • 2 Tbsp. flour
  • 1 (4 lb.) beef pot roast
  • 1 c. canned tomatoes
  • 1 c. water
  • 2 cloves garlic
  • 1 Tbsp. salt
  • 1/2 tsp. pepper
  • 1 c. sliced onions
  • 1/4 c. vinegar
  • 1/4 c. lemon juice
  • 1/4 c. ketchup
  • 2 Tbsp. brown sugar
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. mustard
  • 1/4 tsp. paprika

Method

  • Rub
  • flour
  • on meat;
  • brown well on all sides in heavy kettle.
  • Slip
  • rack
  • under meat.
  • Add tomatoes, water, garlic, salt
  • and
  • pepper. Cover; simmer 2 hours.
  • Combine remaining ingredients.
  • Pour over meat; cover and simmer until tender, 1 to 1 1/2 hours.
  • To serve, slice meat and pour sauce over it.
