- 2 Tbsp. flour
- 1 (4 lb.) beef pot roast
- 1 c. canned tomatoes
- 1 c. water
- 2 cloves garlic
- 1 Tbsp. salt
- 1/2 tsp. pepper
- 1 c. sliced onions
- 1/4 c. vinegar
- 1/4 c. lemon juice
- 1/4 c. ketchup
- 2 Tbsp. brown sugar
- 1 Tbsp. Worcestershire sauce
- 1 tsp. mustard
- 1/4 tsp. paprika
Method
- Rub
- flour
- on meat;
- brown well on all sides in heavy kettle.
- Slip
- rack
- under meat.
- Add tomatoes, water, garlic, salt
- and
- pepper. Cover; simmer 2 hours.
- Combine remaining ingredients.
- Pour over meat; cover and simmer until tender, 1 to 1 1/2 hours.
- To serve, slice meat and pour sauce over it.
