Ingredients
- 1 small pkg. lemon or lime gelatin
- 1 c. boiling water
- 1/2 c. finely diced celery
- 1 1/2 c. finely chopped or shredded cabbage
- 4 Tbsp. diced green pepper and/or 4 Tbsp. diced pimento
- 2 Tbsp. grated onion
- 1 or 2 small carrots, grated
- 1/2 tsp. salt
- 1/2 c. mayonnaise
- 2 Tbsp. vinegar
Method
- Dissolve gelatin in boiling water.
- Blend in mayonnaise, vinegar and salt.
- Chill until practically set.
- Beat until fluffy; add vegetables.
- Pour into a 1-quart mold.
- Chill until firmly set.
- Unmold and garnish with sliced radishes and/or cherry tomatoes.
