Ingredients

  • 1 small pkg. lemon or lime gelatin
  • 1 c. boiling water
  • 1/2 c. finely diced celery
  • 1 1/2 c. finely chopped or shredded cabbage
  • 4 Tbsp. diced green pepper and/or 4 Tbsp. diced pimento
  • 2 Tbsp. grated onion
  • 1 or 2 small carrots, grated
  • 1/2 tsp. salt
  • 1/2 c. mayonnaise
  • 2 Tbsp. vinegar

Method

  • Dissolve gelatin in boiling water.
  • Blend in mayonnaise, vinegar and salt.
  • Chill until practically set.
  • Beat until fluffy; add vegetables.
  • Pour into a 1-quart mold.
  • Chill until firmly set.
  • Unmold and garnish with sliced radishes and/or cherry tomatoes.
