Ingredients

  • 2 sticks butter
  • 3 c. plain flour
  • 1 c. buttermilk
  • 1/4 tsp. vanilla
  • 1 can Angel Flake coconut
  • 3 c. sugar
  • 5 eggs, separated
  • 1/2 tsp. salt
  • 1/4 c. butter flavor

Method

  • Cream butter and add sugar; cream well.
  • Add egg yolks, one at a time, beating slightly after each one.
  • Dissolve soda in the teaspoon of hot water.
  • Add to buttermilk.
  • Add milk and flour, alternately to butter mixture.
  • Beat well.
  • Fold in stiffly beaten egg whites, vanilla and coconut.
  • Bake in a well-greased and floured tube pan at 350° for 30 minutes.
  • Decrease heat to 325° and bake 1 hour.
  • Let cake rest in pan for 10 minutes.
  • Turn out and cover with cloth until cool.
