Ingredients
- 2 sticks butter
- 3 c. plain flour
- 1 c. buttermilk
- 1/4 tsp. vanilla
- 1 can Angel Flake coconut
- 3 c. sugar
- 5 eggs, separated
- 1/2 tsp. salt
- 1/4 c. butter flavor
Method
- Cream butter and add sugar; cream well.
- Add egg yolks, one at a time, beating slightly after each one.
- Dissolve soda in the teaspoon of hot water.
- Add to buttermilk.
- Add milk and flour, alternately to butter mixture.
- Beat well.
- Fold in stiffly beaten egg whites, vanilla and coconut.
- Bake in a well-greased and floured tube pan at 350° for 30 minutes.
- Decrease heat to 325° and bake 1 hour.
- Let cake rest in pan for 10 minutes.
- Turn out and cover with cloth until cool.
