Ingredients

  • 2 c. all-purpose flour
  • 2 tsp. baking soda
  • 1/2 tsp. salt (optional)
  • 3/4 c. vegetable oil
  • 3/4 c. buttermilk
  • 3 eggs
  • 1 tsp. vanilla
  • 2 c. sugar
  • 1 (8 oz.) can crushed pineapple, drained
  • 3 c. coconut, divided
  • Cream Cheese Frosting

Method

  • Preheat oven to 350°.
  • Grease and flour a 9 x 13-inch pan. Combine flour, baking soda and salt.
  • In separate bowl, whisk together oil, buttermilk, eggs and vanilla.
  • Stir in sugar, pineapple and 1 1/2 cups coconut; mix well. Stir in flour mixture. Pour into pan.
  • Bake on center oven rack for 30 to 35 minutes or until toothpick inserted near center comes out clean.
  • Cool in pan on wire rack.
